In this exclusive event, Alejandro Saravia, Executive Chef of Morena, crafts a bespoke six-course degustation experience expertly showcasing the bold flavours and traditions of Peruvian cuisine.
Menu highlights include steamed Murray cod in sudado sauce, inspired by the coasts of Peru; followed by a dish from the Andean Sierras—Meredith goat with adobo, confit Aji Amarillo, and leeks. For a sweet finish, indulge in decadent alfajores, mouth-watering chocolate truffles; and Suspiro a la Limeña (a Peruvian caramel and port meringue dessert). To complement the dishes, enjoy hand-selected South American wine pairings or curated non-alcoholic beverages.
The evening will be hosted in the AM's Westpac Long Gallery, one of Sydney’s most unique dining spaces, where Chef Alejandro will guide diners through Peru's diverse culinary regions, explaining his inspirations for the menu.

Credited with introducing Peruvian cuisine to Australia, Executive Chef Alejandro Saravia has been showcasing the flavours and traditions of Latin American cuisines in Australia since 2006. Originally from the gastronomic capital of Latin America - Lima, Peru - Alejandro has worked across Europe and Australia in some of the world’s leading restaurants.
In 2021, Alejandro opened the award-winning and hatted Farmer’s Daughters in Melbourne, showcasing farm-to-table produce from the region of Gippsland. In 2024, Alejandro opened Morena Sydney, representing a culmination of 15 years of his commitment to spotlighting cuisines from across Latin American cultures and providing Australians the opportunity to experience their unique traditions and flavours.
